The Proctor Maple Research Center was established in 1947 by Governor Mortimer Proctor who thought that the University of Vermont should have its own research station dedicated to maple. Through the years the Center has worked on comparing different methods of processing sap into maple syrup to increase yield while keeping sustainable practices and high-quality flavor.
